Optimising the extraction stage for white musts
A major player in the market for aromatic white wines faced systematic loss of value on its products with a high polyphenolic content. For some grape varieties, polyphenols can lead to bitter, astringent wines, or premature oxidation, which can bring about a slowdown in sales. To meet the company’s quality objectives, Vivelys investigated the areas for improvement at every stage (reception, pressing, and pre-fermentation), and then implemented a new procedure to increase juice quality.

- Analyses the rate at which oxygen is absorbed by the must
- Determines how much oxygen each batch of must requires to ensure an effective and controlled result
- Oxygen is then input into the tank using the O2CM function in one of the Vivelys equipment.

Neoxym
Optimises fraction separation by :
- Continuous monitoring of conductivity, which is indicative of the diffusion of polyphenols within the must,
- Monitoring of the wines’ turbidity and the concentration of dissolved oxygen during the vinification and ageing of the wines.
